Week Four - Duck/Beef

Reflection

What went right:

The slaw for the tacos turned out good. The julienne cuts were pretty uniform. Plating looked nice. Day 2 was just me and Elma. No surprise, but we didn’t have any complications with our recipes in day 2.  We plated on time and received positive remarks. The Beef Bourguignon was tender.

 

 

What went wrong:

Day 1, Not all the ingredients made it into the marinade for the Beef Bourguignon.

Day 2 The Beef Bourguignon could have been drippier, the bread could have been crustier. But overall, a good cook day.

 

 

Areas for improvement:

Really need to watch one of my teammates. She doesn’t follow the recipe and doesn’t listen in the lecture so when we get into the kitchen, can’t understand the basic instructions. The result, and incomplete marinade and Elma and I scrambling on day 2 to correct the problem.
