Week Eleven - Shellfish












Reflection
I made the squash tourney, shelled oysters, and helped Elma with the granita. The squash was overdone by the time we plated.
I made the ceviche. I had good knife cuts. I made sure there was time enough to marinate so all the fish was “cooked” thoroughly by service time. Chef complimented the garnish (avocado and brunoise pepper) I also made the tortilla chips. This was a good dish. I liked it a lot.
But… I tasted all the things and ended up with with a hive rash just a short time later. Nurse Babin said to never eat shellfish again and to get allergy testing.
