Week Eighteen - Final

Reflection

I’m happy with my performance in the final with the exception of the hollandaise sauce. I am glad to have practiced the chicken fabrication. I didn’t make some of the mistakes I had made in the midterm.

The hollandaise was a disaster.

The broccoli was a little bit overdone, but I think it had some carryover after plating. I should take it out of the steamer while it still has a bite to it.

I did well on time. And I made better use of the stewards. In the midterm, I failed to ask for help for a few things that could’ve saved me some trouble. For this exam, I utilized the stewards to clear dishes away, to wash my cutting board, and after a minor accident, to fetch me a fresh pair of gloves.

I can see how far I’ve come this semester. I know I have much more to practice, but I like comparing today to day one.
