Week One - Salads

Reflection

Successes:

Chef showed me how to properly chiffonade the basil. And he taught me how to sharpen my knife.

Day two I made Caeser salad. This was so much fun. I finished baking the bread and making the croutons with time to spare. Chef said it was a good salad.

Stumbles:

Not sure why it took the whole night to make a salad. Yeah, I needed to bake bread, I was careful prepping the lettuce, and I also got distracted by a giant wheel of cheese that needed to be cut into smaller chunks for storage, but I’ve never taken this long to make a salad before. A comment on the finished salad was some bruising at the cuts on the lettuce.

What I would do differently:

If I make this salad again, I will not mix the parmesan into the dressing as the recipe indicates. I prefer to give the cheese its own place in the salad, so it doesn’t disappear into the dressing. I hated the garnish; the parmesan just wouldn’t curl the way I had hoped.

I would also like to complete tasks a little quicker, whether that’s a focus issue or a rhythm that will develop with practice.

I chose to make the Caeser salad because it seemed the least daunting of the week’s recipes. I’d love to get to a place where I choose the recipe that scares me. I don’t want to be afraid of taking risks.
