Week Seven - Pork

Reflection

What went right:

I’ve never cooked swiss chard before, but it turned out really good.

I’ve also never cooked anything sous vide before, so that was fun. Duxelle sauce was successful.

I made tortillas for the first time. And a prickly pear mocktail.

This was a super fun week because of the new foods and cooking methods I tried.

 

What went wrong:

The sous vide tenderloin was overdone, dry. I took it out of the thermocirculator at the suggested temp, but I overcooked it trying to do the reverse sear.

Excess fat needed to be removed from the carnitas sauce, beans should have cooked more, and the rice was mush.

 

Areas for improvement:

Remove meat from sous vide a little early so it doesn’t overcook when searing.

Pickled onion/jalapeno was pretty good, but it could have used more salt. I’m still learning what foods should taste like so it’s hard to know if they’re not there yet.
