Reflection

What went right:

The Glazed Pork Belly was delicious and so simple and easy to prepare. I worried the Creamy Polenta was too drippy, but chef said it was just right.

Garlic chips are awesome.

 

What went wrong:

I accidentally tipped over Cinthia’s deli cup of toasted almonds onto the floor. Luckily a few remained safe in the container so there was enough to plate.

 

Areas for improvement:

Communication when it comes to plating could be improved. Three ladies with different visions of how it should look leads to problems.

 

Midterm

Everything was hurried, as was intended. I made careless errors fabricating the chicken because being rushed, leaving skin on the carcass, a fat line on the airline breast, and cartilage fragments in the thigh. Some of my dices and my batonnet and julienne were too big.

On my plate, there was an issue with everything. Potatoes too thick, green beans too crisp, chicken needed more rest.

Still, I scored better than expected given all the problems. And now am fully aware of my weaknesses in the kitchen as these problems are the result of being hurried. So, I need to practice doing well quickly.
