Week Nine - Game/Lamb

Reflection

The rabbit was good, simple to fabricate, and the sauce was delicious. It had chorizo and chocolate. I felt the plating was a bit messy. It needed more of th sauce but the plate was crowded. Rabbit meat was tender with a mild flavor.

I also worked on the ratatouille. It was a bit of a hunt finding similarly sized vegetables to make neat stacks. I felt it was a tiny bit overdone, a little mushy, but Chef didn’t comment on that so maybe that’s how it’s supposed to be. It was fun to build though.

The Mac N Cheese was not very successful. The sauce was fine until the addition of the cheese, then went grainy. Not sure what caused it, but I typically don’t make homemade Mac n cheese because that always happens.
