Week Three - Preservation

Reflection

What went right:

We got all of our work done and I even had time to mise en place a few items for the next night. Because of that time on day 1, my small dice was correctly sized. The team works well together, communication and pitching in when necessary. Day 2 was busy, but we plated on time. Receiving Chef feedback mid-cook was helpful to correct problems before it became too late.

 

What went wrong:

It was tricky to get toast rounds to go with the Duck Rilette. The baguettes were narrow, so the resulting toasts were small. There was a lot of crust discard and failed attempts. The Duck needed more chill time.

 

Areas for improvement:

Once again, another teammate asked to fabricate the duck, so I haven’t yet had an experience with that.

After reviewing the photos of the finished plates, I think the overall arrangement of the Duck Rilette resembles a swastika. No one said anything, so it might just be me that saw it. I’ll be more careful.
