Week Four - Preservation










Reflection
What went right:
The gravlax on bagels came together well as a team, each contributing something. Pullman bread came out successful. Plating the Duck Bahn Mi and soba salad was a team effort and I think we all were happy with the finished product.
What went wrong:
Portions of gravlax were too generous. Bagels had deflated when getting them into the poaching liquid.
Areas for improvement:
Make sure to lightly flour parchment paper when proofing bagels so they don’t stick and fight going into the poaching liquid.
