Week Five/Six- Sandwiches






























Reflection
What went right:
The croque monsieur came together pretty well, same with the Reuben and Curry chicken.
What went wrong:
We got a lot of corrections this week. The fries were not crisp, needed hotter oil or something. The croissants took a long time, so we plated without it. The club sandwich had several comments, which I think had more to do with the fact that this sandwich will be on our mid-term than it being a bad sandwich, so Chef was just trying to help us improve. The croque Monsieur was ready on time and had to wait for the others, so it ended up dried out a bit.
Areas for improvement:
The bulk of the corrections were with the club sandwich.
1. Toast the bread
2. Spread out the turkey to the edge bites are as satisfying as the center bite.
3. Make sure the tomato extends to the edges as well.
4. Be comfortable making your own mayo.
