Week Six/Seven - Soups

























Reflection
What went right:
I made the peach soup and the tomato soup. I roasted the tomatoes and marinated the peaches the day before. The tomato soup turned out really good I thought the plating was pretty. I preferred it hot rather than cold. And I didn’t much like the peach soup. It tasted strongly of bell pepper with a peach aftertaste.
I also made gazpacho. It was good, had a nice texture. Chef did not give me any corrections on the soup, only on the croutons.
What went wrong:
Croutons were unevenly browned.
Areas for improvement:
The croutons need to be more evenly coated with fat. Next time I’ll try them in the oven.
I missed day 1, did a make-up in Chef Campos’s Saturday class.
