Week Sixteen - Fruit Carving








Reflection
Fruit carving week, and we had to give Chef a salty snack and a sweet snack. I started out thinking to chocolate dip some berries, but realized I hadn’t yet figured out tempering chocolate. So I put a few cookies on the sweet plate. I think I accidentally used couverture chocolate where baking chips would have been more appropriate. The cookies were good though.
I also made some radish roses, cucumber fans, an apple duck, and ran out of time to carve the watermelon. I took it home and worked on the watermelon flower over the weekend.
